Cooking: Steamed Mussels in Lemongrass Coconut Curry

Another one Jaden's Steamy Kitchen, man I love her recipes.

Ya know, I was thinking about staying home tonight, but figured it would be a waste of a perfect weekend. As I was typing on my laptop, Angel IMed me and bragged about her Wii Bowling skills. Aight, fair enough. Now is my chance to shine. So, I got in my car, went to Lucky to pick up four bottles of wine. After that I was on my way to her house to teach her a lesson. Mind you, I had lost to Justyn in Wii Bowling last week. Although my confidence was weak, I knew I could beat Angel. No problem.
So I get to Angel's house and played Wii, and yes, I am proud to say that I did very well. So did she in her defense as she's sitting next to me as I type this and I don't want to be bruised tomorrow. However, dinner time rolled by quickly and we had to think of something to cook. Since I just did Jaden's Chinese Steamed Fish, and knew that Angel liked shellfish, I decided to do Steamed Mussels in Lemongrass Coconut Curry.
Angel now has a great aZn supermarket that just opened near her house which we promptly went to. We gathered the necessary ingrediants while picking up stuff that we didn't really need but we thought so at the time.



When we got home, we prepped everything. First went in the lemongrass and clam juice. It was simmered for 10 minutes per Jaden's instructions.

The next thing we did was boil some water to soften the rice noodles we got. I know Jaden, we didn't get mung bean noodles like your recipe says, but come on. I'm still a n00b at this OK?



After the lemongrass and clam juice had a chance to meet and meld, I added a couple heavy tablespoons of Thai red curry.



I let that simmer for a bit before adding the mussels. Unfortunately, the market didn't have mussels on the shell, so we settled for loose ones.



After the mussels went in, we added the noodles and let that simmer for a bit while we assembled the jellyfish salad. Interestingly enough, they now have pre-packaged jellyfish salad available in your regular aZn supermarkets. Oh yeah!



While the mussels and noodles were simmering away in their rich sauce, we continued our Wii Bowling challenge. Unfortunately, Angel lost, and I won. However, soon after that it was time to plate our food. We had gotten some pre-made seafood salad and kimchi which we had bought and plated that.

So here's the final product.



Jaden - Goddamn, your recipe is as fine as a minx coat. Damn. Pure hotness. We loved and enjoyed it! You're good.
Angel - Thanks for being a great host and having me over. It's good eats when you have friends to enjoy it with.

KM - Add a tablespoon more of the curry paste for extra hotness heh

Wow! You are into cooking mood I see ;) Lots of seafood posts :) Looks very yummy. I just lost 4 loads of recipe photos to Vista windows :( You can say I was mad and so so sad.

WC - Do it tonight. I was really pleased with how easy it was to make and how flavorful the end result was.

TCN - I dunno what it is about summer that just makes seafood taste all the more better.
